Cottage Cheese Flatbread Recipe

- 1 cup cottage cheese
- 1 large egg
- 3/4 cup oat flour (or finely ground oats)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp olive oil (for the pan)
- Optional: 1/2 tsp garlic powder or dried herbs
Instructions:
1) Blend cottage cheese, egg, oat flour, baking powder, and salt until smooth. Rest 5 minutes to thicken.
2) Heat a nonstick skillet over medium, add a light film of oil.
3) Spoon 1/4 cup batter per flatbread, spread to about 1/4 inch thick.
4) Cook 2–3 minutes per side until golden and set. Repeat with remaining batter.
Tip: For sturdier rounds, cook covered for the first minute. Makes 5–6 small flatbreads.
