Green Goddess Pasta Salad Recipe

 

Ingredients: -Ingredients:
- 12 oz short pasta (fusilli, shells, or rotini)
- 1 ripe avocado
- 1 cup fresh herbs (basil, parsley, chives; a little tarragon if you have it)
- 1 cup baby spinach
- 1/2 cup Greek yogurt (or mayo)
- 1/4 cup extra-virgin olive oil
- 2–3 tbsp lemon juice
- 1 small garlic clove
- 2–3 anchovy fillets or 1 tsp capers (optional)
- 1/2 tsp kosher salt, black pepper to taste
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced red onion
- 1/2 cup peas or edamame (thawed)
- 1/3 cup toasted pine nuts or sliced almonds (optional)
- Crumbled feta or shaved Parmesan, for serving (optional)

Instructions:
- Cook pasta in salted water until al dente; drain, rinse under cold water, and cool.
- Blend avocado, herbs, spinach, yogurt, oil, lemon juice, garlic, anchovies/capers, salt, and pepper until smooth and bright green. Adjust lemon/salt.
- Toss cooled pasta with cucumber, tomatoes, onion, peas/edamame. Fold in dressing to coat.
- Top with nuts and cheese if using. Chill 15–30 minutes or serve right away.
