🍝 Spaghetti Carbonara Recipe

- 200 g (7 oz) spaghetti
- 100 g (3.5 oz) guanciale or pancetta, diced
- 2 large eggs + 1 yolk
- 50 g (1/2 cup) finely grated Pecorino Romano (or half Pecorino/Parmesan)
- Freshly ground black pepper
- Salt
- 1/2 cup reserved pasta water (as needed)
Instructions:
1) Boil spaghetti in salted water until al dente. Reserve some pasta water.
2) Cook guanciale in a skillet over medium until crisp; remove from heat.
3) Beat eggs, yolk, cheese, and lots of black pepper in a bowl.
4) Add drained pasta to the warm skillet with guanciale (off heat). Toss.
5) Pour in egg-cheese mixture, tossing quickly. Splash in hot pasta water as needed to create a silky sauce.
6) Adjust pepper, taste for salt, and serve immediately with extra cheese.
